J's Menu - Taro cake for Chinese New Year





Step 1
Mix the following ingredients 
2 teaspoon of 雞粉
1 teaspoon of 五香粉
1 teaspoon of salt
1 teaspoon of sugar
180g of rice flour 沾米粉
1 cup of water
We call this the "mixture"

Step 2
Prepare the following
Mushroom
Dried shrimp
臘腸
Dice them and pan fried them ( no need to add oil) 
We call this "mixture 2"

Step 3
Boil the taro for about 10 minutes till the texture is soft and mashable. Pour out 90% of the water, leave a little bit in the pan.
Add mixture 2 and mixture into the taro pan and mix them

Step 4
Put it in a pan, cover by aluminum foil and boil them for 60 minutes. Add scallions as you like.

J's Menu - green curry chicken


Ingredients 
Green curry paste 
Chicken
Carnation milk 200ml
Coconut milk 300ml
Lemon grass
Thai eggplant
Indian eggplant (optional)

做法:
Marinate chicken with green curry paste for 2 hrs

Fry chickens till the skin is golden brown

Add eggplant and lemongrass, add the rest of the green curry paste - stir fry - add carnation milk, cover and cook for 15 mins

Add oka and coconut milk , chili powder (optional) cook for another 5 mins - done

J's Menu - Japanese tofu


Ingredients :
Minced ginger
搾菜
Japanese fish flakes

做法:
Boil tofu with hot water - done 

J's Menu - beer shrimp

材料:
Shrimps
Bay leaf
Minced garlic
Asahi beer
Chicken stock
Chili powder
Black pepper
Salt

做法:
1) stir fired the mince garlic till you smell aroma 
2) add beer , bay leaves and chicken stock , turn down the gas, and boil till you see bubbles
3) add chili powder and shrimps, season with salt and pepper. Cooked about 5 mins - done
